Back when I was an apprentice, the coloured plugs on R.C.A. patch leads were, Red for Right channel, and Black for Left channel.

When did this become Red for Right channel, and White for Left channel ?
Year please.

I've seen brown used. Or white for right and black for left. Just to confuse matters.

I don't recall seeing black for left. My 1980 era Teac tape deck has white for left.

Just Googled around. You can get black in single sockets but the doubles appear to be mostly red and white.

Stereo cables are red and white. I can't recall ever using a red and black cable.

On systems with only audio, I've mostly seen black for one and red for the other. On systems where there is also video I've seen either red and black for audio and yellow for video or red and white for audio and yellow for video.

Cords with all these colour combinations are available from Jaycar.

I have no idea as to whether or not there is a proper standard that should be followed for these colour schemes.
